    Yes, smoked salmon rillettes – a fave for the holidays! Pretty easy too. Like so many foodies, we have back issues of Gourmet (and Cuisine mag – older still) that we still refer to. Not a fan of their modern “replacements” – Bon Appetit, Food & Wine – they seem to go off the rails on one trend after another and the graphics sometimes look like they were done by a five year old- or several of them and they weren’t getting along. Very odd.
    Time to dress my turtle I guess.. thanks for the great posts Ms. R. Entertaining and educational!
