A Gorgeous Eggplant Pie from the Fifties

It’s a rainy day, and I’ve been looking through this very old issue of Gourmet. Came upon these two delicious-looking recipes that strike me as both delicious and surprising. Not what most Americans were eating back in the fifties!
I couldn’t help throwing in a couple of ads from old traders – and a prescription for a Penthouse Party.

It was a learning experience to try to make the eggplant torta. How much eggplant? How many tomatoes? How much mozzarella? The cooking time is clearly too short to bake a custard. And the result: runny from tomato and mozzarella liquid. Promising, but pretty awful.

I found your book in a $ store! I could not believe my good fortune. My grandmother, best friend passed away & we shared the love of cooking, reading @ recipes! This made my not so good week worth getting through.
