OUR ESTATE WINES

Our rose is produced with the same phylosophy and vinification techniques as all our other wines: full skincontact for texture and territorial identity, malolactic fermentation fully finished and no SO2 added. Not only a refreshing summer wine from a blend of Malvasia, Moscadella, Insolia and Nerello Mascalese, as this is a "rose" which can also be regarded as a light red, like a "Jura" wine, pairing well with a wide variety of dishes.

Our entry-level red wine is basically a field-blend of mostly Nerello Mascalese (85%) with other local varietals from all our old vine vineyards: Nerello Capuccio, Allicante Boushet, Minella nera, Uva Francesa and Minella bianco. Our Contadino expresses Etna as made in a traditional way of blending different varietals: fragrant, elegant, structured with personality.

A rich and fragrant wine of pure Nerello Mascalese from different vineyards, partly from our best parcels where we produce our crus (Chiusa Spagnolo, Monte Colla, Porcaria, Barbabecchi) as well as designated vineyards for this specific wine (Rampante, Piano Daini and Crasà). A classic, traditional Nerello Mascalese with tannins and sweetness of ripe fruit. My vision of a traditional, balanced and rich Northern Valley Etna wine.

Our white wine, produced like a red wine: full skincontact to achieve texture and territorial identity. The unusual character suits a wide variety of dishes and cuisine, from fish to white meat. The vineyards (Calderara, Borriglione and Crasa) are located between 650 and 900 m. asl with. A blend of 60% Grecanico Dorato and 40% Caricante.

OUR CRUS AND SINGLE VINEYARD WINES

Our "Grand Vin" from our Barbabecchi vineyard at 910 m asl. Planted around 1910 and North-North East exposed, capturing the first morning sunrays. This pure Nerello Mascalese from ungrafted old vines produces a profound wine, rich as well as elegant at the same time with character and personality: liquorice and oriental spices. Only produced in great vintages where we achieve full phenolic ripeness.

This pure Nerello Mascalese comes from our ungrafted vineyard Chiusa Spagnola, situated lower in the valley floor, a bit hidden in an amphytheater, surrounded by lava. A unique vineyard, planted around 1925 at a lower altitude (620m. asl) producing a profound, tannic wine, a bit more backward and Nebbiolo-ish compared to our other crus.

This pure Nerello Mascalese comes from our cru in contrada Monte Colla. An extremely steep and terraced vineyard, beautifully exposed to sun and wind and right in front of mount Etna. The sandy clay soil and the old-vine Nerello Mascalese, planted in 1946, reach a richer and more powerfull expressio, maintaining elegance. Our "Hermitage" of Etna.

This pure Nerello Mascalese is produced from our old vine alberello cru Porcaria, situated at 640 m. asl. in the contrada Feudo di Mezzo. A challenging location in order to achieve perfection in maturation. It has the power as well as refined elegance in the balanced vintages when everything falls into place.

This pure Nerello Mascalese is a blend from our 4 highest vineyards (Vigne Alte): Tartaraci, Barbabecchi, Monte Dolce and Zocco Nero. It expresses beautifully the value and precision of the old vine, ungrafted Nerello Mascalese on the high terraces in the Northern valley of Mount Etna. The most Burgundian of all our crus.

A special white wine, from our Tartaraci vineyard, located at 1.000 m. asl from ungrafted vines. At the edge of where vineyards were planted on Etna, this white combines high acidity with minerality and texture.

OUR OLIVE OILS

The Contadino olive oil is a blend of the bigger local "cultivars" like Brandolfina and Noccelara dell'Etna, refined and dense at the same time due to the volcanic soil.

Magma® is produced only from the low yielding San Benedetto cultivar. Once every 5 years we get the right conditions to produce this olive oil, due to climatic difficulties to achieve perfect ripeness without damage of the olives.

OUR DISTILLS

This grappa is produced from the skins of our Grand Vin, Magma. A double stil, first of the skins and pips and then the first stil is re distilled to obtain more focussed flavours. After a minimum of 2 years of rest in stainless steel or demi johns, the grappa is bottled at full strength without cold or filtering.

Distillato di Vinaccia di Magma®

Alcohol: between 72% and 78%

This grappa is produced from the skins of our pure Nerello Mascalese wines, MunJebel Rosso classico and all our MunJebel crus. A double stil, first of the skins and pips and then the first stil is re distilled to obtain more focussed flavours. After a minimum of 1 year rest in stainless steel or demi johns, the grappa is slightly diluted before bottling without cold or filtering.

We pick the juniper berries high up mount Etna just before the first frost hits the mountain around december in order to obtain high maturity and sweetness of the berries. After selecting the berries, we put these in every single bottle before corking where they mascerate at least 3 months before the colour gets darker. The grappa we use is our MunJebel grappa.

We pick the Nepitella, a wild herb which grows before the harvesting period, in the flowering season. After selecting the most perfumed Nepitella from our Barbabecchi vineyard where we produce Magma, we put one branch in every single bottle before corking where it mascerates at least 3 months before the colour gets slighty green. The grappa we use is our MunJebel grappa.
